Queen, hits the stage with her signa-
ture red boots, her audience has
about six seconds to get on her wave
length. Caroline lets them know right away that they are about to
experience something really refreshing- a real person that is
comfortable with her beliefs and has no problem making you
laugh at them. Once Caroline is on stage it's crystal clear that
you have come to the house of "The Queen" and you will play
by her rules.

For 18 years I toured up north, and by north I don't mean
Shreveport. I based myself out of Cleveland, Ohio with friends
that lived there. One thing I quickly realized. North and south
are very different from each other. Oh, not the seasons, not the
cold, not the snow. The FOOD! I love my Yankee friends and
fans, yet we eat completely differently! When I first went up to
Cleveland my friend told all her family the Cajun from Texas
was coming. They all showed up for my arrival. There definitely
was a look of disappointment when I walked in wearing a base-
ball cap instead of a Stetson.
My friend had asked me if I could cook something Cajun for
her family. I said of course, because that's how I cook! I decid-
ed on gumbo, easy for me, I can make my roux, no problem. I
asked my friend "let me see your spices." When I opened her
pantry, I asked her "you need to go to the store for spices?" She
said "no, that's my spices, salt and pepper." Salt and Pepper?
That's it? Salt and Pepper was a hip-hop group in the '80's. I
went to my truck and got my can of Tony Chechere! Never
leave home without it!
