i everyone! Hope you are having a
great year! I must tell you, that Bunny
was in a tither as to what to write this
month. I’m sure everyone is tired of
Hwinter fare, (I know I am), but it’s too
early for summer goodies and snacks. So, Bunny is
going to brighten up your morning with Breakfast Egg
Muffins. For all you first time readers, (My regulars
already know) Bunny posts old recipes passed down
from family and friends, and sometimes you have to be Directions
the judge of the amount of ingredients by your own
skills, and taste. This is one of them. Whisk eggs and milk with salt and pepper. Add the
bell pepper and spinach, and mix thoroughly. Then
blend in your cheese.
Grease muffin tin or use cupcake wraps in your tin,
and fill your muffin tin cups ¾ full.
Bake at 375 degrees for 20-25 minutes.
Serve hot (be careful getting the muffins out, don’t
want to burn your paws)

you have guests or a large family.

• ¼ cup Milk
• Bell Pepper, chopped finely
• Fresh Spinach, chopped finely (Make it EASY Happy Trails,
folks, and buy a bag so you don’t have to
rinse and dry) Bunny
• Cheddar Cheese
• Salt and Pepper to taste
